Blueberry Crostini
This is probably my favorite new recipe from the “Cook Beautiful” cookbook. It’s so simple, quick and scrumptious!
cut small pieces & drizzle both sides of baguette slices and place under oven broiler for 1 to 2 minutes per side…really stay with it and watch to see when they begin to brown and remove
once completely cooled, spread some ricotta cheese on slices & top with blueberries, lemon zest, fresh thyme, honey and sea salt
As we all know, food is one of the most wonderful ways to make memories with loved ones! I love to cook and bake. Now that I have more time on my hands, it brings me even more pleasure; taking my time to try new recipes or make family favorites. I love to use seasonal ingredients, when possible. In this summertime season, our meals tend to be simpler and lighter. One of my favorite things about summer are the delicious and abundant fruits and veggies. It’s hot here in the South so sometimes we crave cold meals or sides and one of my go-to’s is a watermelon salad. I also love to pop fresh berries or peaches on top of my yogurt or oatmeal bowl. For summer dinners, my husband is the best at grilling steaks, burgers and especially fish! We’ve found delicious fresh red snapper and trout at Whole Foods this summer. I’ll simply pair the protein with a summer vegetable (corn, sautéed zucchini), orzo pasta, fresh fruit or a green salad. Just to keep it real lest you think we’re too healthy to believe…we love mashed potatoes and mac & cheese, too! And breakfast for dinner is always an option (with bacon, of course). I acquired a new cookbook called “Cook Beautiful” by Athena Calderone this summer which is a gorgeous book with stunning photos and mouth-watering recipes! Sometimes we get in a meal rut and I find it refreshing to flip through a new cookbook for inspiration. I know I will miss some of these yummy fruits when the season turns to autumn, so I’ll savor them for now!

oatmeal with milk, sea salt, fresh grated ginger & turmeric, and cinnamon stirred in and topped with fresh peaches, cashews, pumpkin seeds, sunflower nuts, goji berries and maple syrup
