Food - Pasta - Ziti & Veggie Marinara

This is one of my easy, quick, “go-to’s” for a yummy veggie pasta sauce.

Ingredients

  • fresh chopped tomatoes ( one tomato, depending on size..sometimes 1/2 will do)

  • sliced shallots or onions ( as many as you like)

  • chopped garlic (as much as you like)

  • about a tbsp olive oil

  • zucchini (sliced in half moons, as much as you like)

  • sliced red & green peppers (as much as you like)

  • fresh basil & thyme (I cut my basil with kitchen shears and remove the thyme from the stems with my fingers)

  • one can of tomato paste

  • chicken stock (about 1/2 cup but you can add more or less depending on how thick you want your sauce)

  • salt & pepper (dashes)

  • splash of wine (optional)

  • pinenuts (optional)

  • pecorino (could also use parmesan)

  • ziti

    Pour the olive oil into a large skillet on medium high heat. Saute the veggies in the oil until tender (add fresh garlic last). Add tomato paste, chicken stock and wine. Simmer to let the tomatoes cook down. Stir in the herbs, salt & pepper. While the sauce simmers, cook the ziti, drain, add to the sauce (you can add a little pasta water if you like). Top with pine nuts and pecorino and dig in!
