Food - Meat & Potatoes

Sometimes, we crave your basic, comforting “meat & potatoes” kind of dinner. We like to make it a little “not so basic” by adding a few simple ingredients.

To add more flavor to my favorite cut of beef, we marinate it in a little soy sauce, balsamic vinegar, Worcestershire sauce, salt & pepper and garlic powder. David is THE BEST griller and always cooks the meat just right.

rosemary butter

It’s amazing what a little butter and rosemary can do to a steak! These two simple ingredients add ALOT of flavor when melted on top of the steak. I used Kerrygold butter this time. It’s so soft and creamy, already, that you really don't have to set it out ahead of time to soften. Simply press some butter into a bowl and mash in pieces of fresh rosemary. It’s ready to spread on top of the steak when it’s hot off the grill.

Adding a little fresh, chopped chives and fresh grated parmesan cheese to homemade mashed potatoes adds that additional deliciousness. After I chop, boil and drain a baking potato, I mash the pieces with a potato masher, then add butter, sour cream, fresh garlic, salt & pepper. Simply stir in the chives (I snip them with kitchen shears) and grate the cheese with a microplaner.

lemon butter asparagus

I’ve been preparing asparagus this way for years and it’s still my favorite way to enjoy this beautiful green veggie.

This is crazy fast and easy. Add just a little water to a skillet. Add the trimmed and rinsed asparagus with a pinch of salt and bring to a boil. As soon as the veg turns a darker, brighter green, take the stalks out of the pan. It truly only takes about 2-3 minutes to cook.

I drizzle melted butter and lemon juice over the asparagus and sprinkle a little lemon zest on top. The green goodness is tender yet crunchy.
