Food - Quick & Veggie

Sometimes, the simplest, quickest recipes hit the spot. Here are a couple of somewhat healthy and delicious options !

green open face sandwich

Slice a piece of store-bought challah bread (or any type of bread you like), spread Miracle Whip or hummus and top with avocado, gouda, arugula, micro greens and salt & pepper.

chop & slice baby kale, red cabbage, celery, carrots, cucumber, red & green peppers

These are the veggies I had but you could really use any kind of veggie you like.

dip rice paper rounds in warm water for just a couple of minutes, place on flat surface, add veggies and roll up (I had leftover steak so I added that to a couple of rolls but honestly, I liked the veggie-only ones better)

peanut butter dipping sauce: add all ingredients to a food processor or blender

4 tbsp creamy peanut butter

2 small garlic cloves

1 tbsp soy sauce

1 tbsp sriracha ( I only add a tiny bit)

1/2 tbsp lemon juice

1 tbsp honey or maple syrup

5 tbsp water

1/2 tbsp sesame oil

Peanut Sauce Rice Noodles

cook rice noodles or any other kind of noodles according to their directions, drain & set aside

chop green onions & garlic (the garlic is for the peanut sauce recipe above) use as many onions & garlic as you like

make the peanut sauce (as shown above for the spring rolls dipping sauce)

stir peanut sauce in with the noodles, top with green onions, peanuts, cashews and sesame seeds

When I worked at preschool, I loved taking this easy, healthy, portable lunch to enjoy at my desk. It would be great for a picnic, too! Simply chop any veggie and fruit you like and pop in a glass jar. Make sure you put the dressing of your choice in first ( I made a simple balsamic: brown mustard, salt, pepper, lemon juice, sugar, honey or maple syrup, balsamic vinegar & olive oil), add the hard veggies/fruit next, and top with the softer foods (lettuce, spinach, micro greens).

Another thing a love about this recipe is it’s a way to reuse a pickle jar! I added cashews, seeds and frozen peas to this particular salad. You could also add a grain or noodles if you wish. Pour out into a bowl and enjoy!
