Food - Veggie Soup
When there’s a chill in the air and the leaves start to change to red and gold, it’s soup season! This hot, “comfort food” meal is about as easy and delicious as it gets and you’ll have leftovers for a couple of days.

What I love about making vegetable soup is that you can truly add any kind of veg you have on hand and either chicken or vegetable stock. I’d say you must have some kind of onions, celery, carrots and tomatoes but other than those, you can add any type of veg to it. I’ve also added white or red beans before and orzo pasta to this particular batch.
ingredients (slice & chop any amount)
onion
carrots
celery
tomatoes (fresh or canned petite)
potatoes
red pepper
zucchini
yellow squash
garlic
thyme (or any other herb you like)
1/4 cup orzo pasta
salt & pepper to taste
chicken or veg stock (enough to cover your veg in the pot…you can also add water if needed)
olive oil
Pour about a tbsp of olive oil into large pot on medium high
saute onions, celery & carrots for a few minutes until they begin to tender
add all other ingredients and bring to a boil, then simmer for about 30 minutes or so
check to see if potatoes and carrots are completely tender, then it’s done
enjoy with crackers, bread or your favorite sandwich!
